salmon smoking - brines and methods
Posted by acadinak on Jun 17 2004
Anyone willing to share their favorite method of smoking salmon. I have a little chief smoker, and my dad recommended using Morton sugar cure. I bought some, but the only directions on it are for curing ham. Dad says he mixes it by feel, till the brine "feels silky". Thats a little unclear. Any suggestions on mix proportions? How long to brine? How long to let it develop a glaze? How long to smoke, using a little chief? My best friend always just did it for me, but he died last year. Now it's time for me to learn.
Thanks in advance.
Steve
