Halibut Parmesan

This is my favorite halibut recipe.  I usually double the ingredients listed below and I probably use 2 cups of cheese.  The more the better!  I also add different types of peppers and some mushrooms to the mix.

Halibut Parmesan

2 Lb halibut
2 Tbs. Lemon Juice
½ C. fresh grated Parmesan cheese
3 Tbs. Mayo
3 Tbs. Chopped green onion
¼ tsp. Salt
4 Tbs. Softened butter
2 Tbs. Chopped red bell pepper
dash black pepper
dash Tabasco

Brush fillet w/ lemon juice & let stand 10 minutes.  Combine the remainder of ingredients.  

Broil 3”-4” from preheated broiler for approx. 5 minutes

Spread cheese mixture on fish, broil 2-3 more minutes
