Try coating one side with seasoned potato flakes and season the other side with salt, pepper, garlic salt or whatever. Cook potato side first in olive oil until crispy then cook the other side, be careful not to overcook it or it will be dry. You can also deep fry in beer batter like halibut. Lings are delicious!
