There is more to do with your salmon. You can have it smoke before you pack it home.

With salmon canned there are many things to play with in that form. Salmon chowder, salmon cream cheese ball with nuts, salmon gravy with biscuits, flake up in the spaghetti sauce as a meat... tons of stuff for canned salmon.
