I've tried lots of fillet knives, but my favorite thus far is the Cutco fillet knife. I think they call it the "Fisherman's Solution". It's got an extendable, flexible blade, a rubber handle that's easy to grip, and they'll keep it sharp for life. There are much more expensive "custom" choices out there, but I've been nothing but happy with my knife.
