I am a big fan of Cutco.  My wife used to sell them in Texas, that's where I was turned on to them.  They are awesome hunting, fishing, kitchen,ect. knives.  For the filet knife, you can buy extra blades.  Since you can never sharpen them like new, if you send all your blades in to Cutco they will sharpen them for $5 total and send them back with the original "clothed" sharpness that you can't do on your own.  Just FYI...
