I'll second the Forschner recommendation. The most popular knife for kings here on the Great Lakes. I use 2, a 12" for the heavy stuff and an 8" for removing the ribcage. Using 2 seems to keep both of them sharper.

Skydiver, could you direct me towards the leather sheaths? I've never been able to find one.
