Frank - I personally use 12-15 lb test, but I would probably spool a reel for a newer fisherman with 20 lb test.  It kind of depends on what you want.  If you'll be disappointed with a few broken lines, go with the 20.  If you want to really play the fish and don't mind a few breaking off, go with the 15.  (Also, if you'll be fishing in crowded areas, go with the heavier line.  Pulling in fish quickly will save you the tangles and frustrations that come with playing a fish in the midst of others.)

As for brands, I am a total believer in Maxima.  For the Kenai or other clear/glacial streams I have found that the Ultragreen color is the way to go.  I honestly don't know many specifics about why the Maxima is better, but I love the stuff.  I used to use Stren and Trilene, but a guy at a local shop recommended Maxima.  I'll never go back to the others.  Just my preference, though...
