Spruce Chicken, reicpes?

My youngest boy, Casey age-8, has had a good run on Spruce Chickens latley. He has a trusty .22 Chipmunk that he is deadly accurate with, now we have plently of Spruce Chickens to feed the family.
I like Spruce hens just as much as the next guy, however if my son had it his way I'd be fixin them every night for dinner! (I'm sure this will the THE year for him to go Caribou hunting...we NEED some different meat for the table,and of course it HAS to be harvested by one of my boys) The favorite way to prepare them in my house is to wash & rinse the breast in water and then "bread" them in pancake mix, fry in a hot oiled skillet, with a touch of salt/pepper/and garlic.
Anyway, I need some more idea's/recipes for cooking Spruce Chickens.........
