spruce grouse recipe...
Posted by av8r on Oct 20 2005
One of my favorites for home or at the campsite..

breasts of a couple grouse (or ptarmigan), slice them up like you were preparing fajitas, about 1/2 inch strips lengthwise. Lay out a strip of thin bacon, not the thick stuff..takes too long to cook. The cheap fatty stuff works great!  Slice a couple of fresh jalepenos up, about .3 inch thick. place the bird meat atop the pig meat and put the pepper on one end, roll up tight, and skewer in place with a toothpick!  Pan fry in camp skillet till bacon is crispy. Voila!  If your kids didnt like wild bird before, they will definitely love this!
