Try making a teriyaki marinade using, soy, brown sugar, garlic, pepper, ginger (fresh is best), a little cayene (optional), and a small amount of red cooking wine, mix it to taste then marinade the hen for at least 3 hours though overnight is best. Grill those babies and serve with steaming jasmine or basmati rice. I do that with regular chicken thighs and it's always a big hit. You could also roll them in Panko flakes and fry them that way, it's not as absorbent as the pancake mix and won't hold the oil. Enjoy!
