I've been using Helle knives for about 20 years now and have always had good experiences with them.  My personal favorite is this one < http://www.helleknives.com/product10.html >.

All you really need is a 2" blade or so.  I keep my field care tools in a ziplock bag in my pack at all times.  You only need them when you're dealing with an animal, so no sense wearing it on your belt or having it in the way.  For a general camp knife you might consider a multi-tool.  Anyway I use the same knife for caping/skinning and for quartering the animal.  I don't use a bone saw for removing quarters because those sharp bone edges will cut through your game bags.  Just remove the quarters at the joint.  You can do the same thing with the ribs and you don't have to use a saw at all.  With animals where you're removing the antlers / horns on a patch of skull plate (not the entire upper skull), you will need a saw or sharp hatchet.  The hatchet is faster, but heavy to carry.  The saw I use is a cheap simple folding saw made by Coghlan's or Coleman.  It folds up into the handle.  Bring two; you never know when you'll break a blade.
