Probably because they contain more parasites in general than cloven hoofed animals, as much as taste. Black bear isn't bad at all, in fact the tastiest hamburger I ever ate was a 50-50 mix of moose and blackbear. In Chignik, they subsistance hunt for Brown Bears. Anything is edible if you're hungry enough. I've personally tried porquipine and beaver and seal and didn't really care for any of them, but there are people who do.
