My absolute favorite is sheep hunting, but there are two others that are close. What can you say about chasing Dall rams? It's impossible to explain the addictive nature of sheep hunting to someone who hasn't gone. I tried to explain to my wife this past year why I would rather hunt yet another sheep than go after something I haven't yet hunted (goat), and she just didn't get it. That is, until she went along with me. We had an awesome hunt this past August, and now she's an addict too. It just gets in your blood...
While sheep hunting is my favorite, for pure fun I think caribou and Afognak deer are close contenders. Caribou out on treeless tundra are just a blast...especially bowhunting them. I spent 6 days up on the Haul Road this year chasing 'bou, and even though I wasn't successful it was some of the most fun I've had. I hiked out away from the road most days to get away from the others and usually made a couple of stalks a day. It's ridiculously fun trying to get within 40 yards when there's nothing to hide behind and then trying to sit up to draw the bow. I've also chased caribou on walk-in hunts in the Kenai Mountains, off of the Denali Highway and Eureka, and over in the Mulchatna herd, and always have a load of fun.
Afognak deer hunting...that has to be one of the most beutiful environments on earth, especially over on the west side of the island where there are no logging roads. The forest is thick and incredibly quiet because of the thick moss covering everything. We would still-hunt through the woods and whenever we'd see a deer it would be within 30 yards. I actually sat against a tree one day and had a deer walk within 3 feet of me before stopping and staring at me for 5+ minutes before going back to feeding. That's one of my favorite experiences...and there was no shooting involved. On that note, however, another great thing about deer hunting up here is that you can take more than one animal. I'm perfectly happy with unsuccessful hunts, but it's also a lot of fun to go back out in the woods after harvesting one or two animals.
So, I suppose I have three favorites!

(Farewell Bison was pretty fun too, but I don't suppose I'll ever get to do that hunt again!)
