victorinox knife

I once watched a guy bone/cape an entire sheep with a knife that looked like a kitchen paring knife.  I was amazed that it did not seem to get dull through the whole process.  He said it was made by Victorinox (the same company that makes Swiss Army Knifes).  I think it would be perfect for a walk in hunt because it is so lightweight.  I have been unable to find these online.  Does anyone have experience with a knife like it, know where I could find such a knife?
