Victronox paring knife rocks!

Two places I know for sure have them are BJ commercial in Anchorage, they aren't by the regular knife rack so ask about them, or the Gear Shed in Homer, oh yeah, Mountain View Sports used to have them in their trapping section, and probably a few other shops carry them.  Do a google search for Victronox paring knife and you'll find plenty of cuttlery supply shops that carry them.  http://www.amazon.com/gp/product/B0000E63ZN/002-7469292-4068860?v=glance&n=284507

I have about a 1/2 dozen of them and they see about 80% of my knife use in the kitchen, for $5 you simply can't go wrong!  When I finish my boat I'll probably pick up another 1/2 dozen to stash aboard.  I have one of the sheeps foot blades, slightly better for dicing chores, but overall I prefer the paring shape.

I wouldn't say they stay sharp forever, but they come super sharp out of the sleeve.  I believe alot of the benefit of the design is the fact a thin blade simply takes less force to use.  Just carry one of those ceramic sharpening do-hickeys to touch up the blade.
