Eating game meat

AJ,

A few years ago my daughter, then five years old, complained about the taste of the meat we were having for dinner and I had to apologize that it was beef.  That's my girl!  Alaska born and raised!

I shot a female goat (that's a nanny, for you folks in Los Angeles), and I have to say that though the animal was 14 years old, it was the best tasting game meat I've ever had.  Sheep is a close second, followed by moose and caribou (not necessarily in that order).

I could come up with an exotic, interesting and completely fabricated reason why it tastes better, but the fact is that I haven't a clue.

Now, here's a question for the rest of you gourmet game eaters; how come wild game gives you gas and, more importantly, how can you prevent it from happening?  No big deal around the campfire (seen the movie "Blazing Saddles" lately?), but what do you do in polite company (uh... assuming you occasionally find yourself in such places).  Inquiring minds want to know...
