It's not Alaska or Canada, but takes place across the Bering in eastern Siberia...so forgive me on that, but have you had a chance to read V.K. Arseniev's DERSU THE TRAPPER? Was made into a pretty amazing b&w movie as well. Some great stories and great insight into what old-time survival entailed.

For kids, and adults, Ernest Thompson Seton's TWO LITTLE SAVAGES is a fine tale that will bring you back to the basics of the late 1800s in eastern Canada. With a bunch of how-to info in there as well, from arrow making to fashioning your own mocassins to using geometry/trig to figure out heights of trees and all sorts of other fun stuff.
