I'd expect real world terminal performance to be pretty much a wash between the two.
Here are my thoughts, if you want a 400 yd moose rifle, the 338 RUM would have the edge. The big caveat is that there are damn few people that have the shooting skills to shoot a 338 rum as accurately as a target rifle for such long shots. You have to be honest with your abilities, and the amount of practice you do. You can go with a heavy rifle or a muzzlebrake to tame the recoil, but I personally abhor either of those options in a hunting rifle.
The downside of the 338 rum is that the high velocities really strain a bullet for close in shots. Barnes X and swift A-frames and Winchester failsafes and Northforks are the only bullets I would trust for up close shooting on heavy game when pushed fast.
The 375 H&H with it's milder velocity and bigger bullets simply doesn't strain things the same way the smaller faster 338 does. With a well constructed 270 gr bullet @ 2700 fps, it is an honest 300 yd rifle for any game in NA, and all but the thickest skinned African game, in which case you go to a 300 gr @ 2500 fps. The fealt recoil on a 375 is even less than the 338 ultra, because you don't get the fast jab.
Personally I'd take a 300 win mag or 300 WSM and a 375 H&H. The 300's are even flatter shooting and more importantly in light shootable rifles. The 375 for the bigger stuff. To me the 338 ultra doesn't work as well as a 300 for the long shots, and isn't quite as good for the big stuff up close. I'd say the 338 ultra is the ultimate long range elk rifle, but a compromise in other tasks, and not my cup of coffee for AK.
