if you had to pick ONE gun...

don't pick the 375.  Case in point... We were on Kodiak this last fall and one of our group hunters emptied his magazine more than once trying to hit a 260 yard deer.  Close up (100-150 yards) his 375 gun was great and accurate, but once the distance increased, it sucked, frankly. His bullet drop off was terrible.  
The 338 Ultra is a great gun for all game--even deer should you so choose. It has excellent velocity as was mentioned and it has great power down range.  You might be shooting a bear from 200+ yards, get proficient with a 338 ultra and go get your bear or deer, or sheep or goat etc...
