My experience with bears is such that every unintentional meeting I have had with a bear is usually that it is over before I knew it started.  If you don't have some type of fair warning before hand all you will have time to do is get flattened and chewed on.  If you have time enough to watch a bear get riled up and start huffing and popping it's jaws, that I suggest you use it to head the other direction.  
It happens fast.
