Yet, my experience has been that the flies still seem content to blow a few eggs, spread out their little beach towels on the sprayed areas, and make a day of it. I've been fortunate to have never lost meat to larvae since I've always meticulously removed eggs or gotten the meat to the freezer prior to hatching. I'd like to attribute my lack of problems with bacterial growth to clean field butchering practices and the application of citric acid, but like you, there appears to be very little (i.e. none) literature out there that confirms how much C.A. is enough. It's more of a comfort issue than anything. Just like knowing that sighting in my '06 1.75 inches high at 100 yards results in dead-on at 200, I'd like to know that, for example, 20 parts citric acid to 100 parts water is enough to toast those critters' little tootsies.
